How do I measure the pH of a flat surface?

The Camlab Epoxy Tough and Rapid pH electrodes both feature a flat electrode design which is ideal for measuring the pH of flat surfaces such as meat and cheese.

For softer materials you may find the spear tip models more useful. These allow you to penetrate the sample with probe.

Both these types have double junction references to avoid blocking caused by proteins and pectins.
